The Main Attraction…
Beef Wellington – This sumptuous dish full of rich flavours has always been a hit at our dinner parties, it pairs beautifully with Two Tails Marlborough Pinot Noir. Keep your side dishes simple so your guests can concentrate on the flavour of the tender melt-in-the-mouth beef; sautéed potatoes and steamed green vegetables, add some baby carrots for colour, this is required to offset the rich, dark colours of the beef.

And Now For Dessert…
Russell loves to come up with new recipes, and we think you’ll love this one too… It also pairs wonderfully with Two Tails Marlborough Pinot Gris.
10 each Gingernut and Krispie biscuits crumbled and blended with 75g softened butter, form into 20cm dish and put into fridge to set while making filling.
- 250g cream cheese
- 125g plain whipped cream
- 2 tins lychee in juice
- 1tbsp icing sugar
- Juice 1 small lemon
- 30g Turkish delight
- Soften cheese and blend with cream in medium to large bowl
- Separate Lychee from juice, keep half the juice in small sauce pan, discard the rest
- Blend Lychee to pulp and reduce to half over mod heat to evaporate excess liquid
- Add Turkish delight to the Lychee pulp and stir until dissolved
- Add Lychee pulp to cheeses, mix with icing sugar and lemon juice to taste
- Pour / ladle into biscuit base and leave in fridge to set, 1.5 hrs
Reduce Lychee juice to half by evaporation then add 60g random cut pieces of Turkish delight, dissolve the Turkish delight until a few pieces remain to decorate each serve. Cool sauce before plating.
