Lamb, duck and a mild chorizo are classic meat partners for Pinot Noir especially when served with root vegetables and a red wine reduction. Blue cheeses and vintage cheddars also pair well with Two Tails Pinot Noir.
The grapes for Two Tails Pinot Noir are grown in Marlborough’s Wairau Valley. The vineyards are on north facing slopes with older river stones under clay gravels. The vines produce grapes with flavours of dark cherry and red currant.
The grapes are hand harvested, sorted then de-stemmed before fermenting in open vats with regular hand plunging. The wine is racked, then matured with French oak for several months for a full integration of fruit and oak. Batches are selected and blended for style consistency, then fined with egg whites for a pure and elegantly finished wine.
