A game platter with cured meats and a mild chorizo partner well with this wine, as do mild blue and wash rind cheeses.
The grapes for Two Tails Pinot Noir are grown in Marlborough’s Wairau Valley. The vineyards are on north facing slopes with older river stones under clay gravels. The vines produce grapes with flavours of dark cherry and red currant.
The grapes are harvested then destemmed before fermenting in closed tanks vats with regular pump-overs. The wine is racked, then matured with French oak for several months for a full integration of fruit and oak. Batches are selected and blended for style consistency, then fined for a pure and elegantly finished wine.
