We recommend fresh seafood. Oysters are a natural accompaniment for New Zealand Sauvignon Blanc and this wine is no exception. Try with crab and clams to bring the vibrancy of this wine to the fore.
The grapes for this wine were grown in the Narrows and Baysview vineyards in Marlborough. The Narrows, in the upper Wairau Valley, has 2 sites. One, a north facing slope produced grapes with very ripe tropical flavours and was harvested first to capture their characteristics. The second Narrows site, is on stony river gravels and produced fruit with herbal and gooseberry attributes. Baysview vineyard, is in the centre valley on older river gravels overlaid with clay gravels from the southern valleys. The Baysview grapes have an abundance of gooseberry and citrus notes.
The grapes from the 3 sites were fermented as 3 wines with selected yeast strains to capture their individual fruit expressions grown in the vineyards. A final blend of the finished wines resulted in a style consistent for Two Tails. The wine exhibits the vibrant, characteristic qualities of Marlborough Sauvignon blanc in a truly expressive style.
The 2007 Marlborough season was perfect for growing Sauvignon blanc. Plentiful sunshine and cool evenings contributed to ripe fruit with a good natural acid balance. The grapes were harvested in optimal conditions with no climatic pressures.
