We recommend fresh seafood. Oysters are a natural accompaniment for New Zealand
Sauvignon Blanc and this wine is no exception. Salmon pairs well with this wine. Also exciting is a tomato based salsa with avocado and a touch of chilli, as is a, citrus dressed, fresh green salad with crumbled goat cheese and crispy smoked bacon.
The grapes for Two Tails are grown on two and three cane vines in Marlborough on the Narrows and Bay vineyards. The Narrows, in the upper Wairau Valley, has 2 sites. One, a north facing slope produces grapes with very ripe tropical flavours and harvested to capture these characteristics. The other is on stony river gravels producing grapes with citrus and gooseberry attributes. The Bay vineyard, is in Marlborough’s centre valley on older river gravels overlaid with clay gravels from the southern valleys, producing grapes with pungent gooseberry and ripe citrus characters.
The grapes were fermented in stainless steel tanks with selected yeast strains to capture their individual fruit expressions. A selected blend of the fermented wines resulted in a style consistent for Two Tails. The wine exhibits the vibrant, characteristic qualities of Marlborough Sauvignon blanc in an expressive style.
